If you like fish, you can make minced fish balls.

To make the soup lighter, you can add the pulp of a soaked loaf to the meatball mince, but this is not necessary. By the way, you do not need to put a lot of eggs in the minced meat for fastening, it is enough to knead it well.

The soup itself is hearty, light with melting pieces of meat in your mouth. Therefore, such soups are loved not only by adults, but also by children.

Minced meat is used only fresh. A real hostess will never take frozen meat. If you buy minced meat in a store, then you need to take chilled. Add to minced meat breadcrumbs, or bread crumbs, pre-soaked and squeezed.

Crackers can be replaced with semolina, it swells well and holds the minced meat together. Do not overdo it with cereals, there should be no more than 1-2 tablespoons per 0.5 kg of minced meat. After you add the semolina to the minced meat, let it brew for 15-20 minutes.

Bones are used to prepare meat broth, for fish broth - tail, head, skin, and for vegetable broth - any vegetables that are at hand. Mushrooms, carrots, onions, and various herbs are ideal for vegetable broth. Thanks to the broth, the meatball soup will be more rich and aromatic, it will acquire a richer and brighter taste.

Reduce heat to low before adding the meatballs to the boiling water, so your broth won't be cloudy. Do not boil the meatballs separately, the soup will have a completely different smell and taste. If you're not on a diet, you can fry the meatballs in a skillet to make your soup even tastier.

Prepare the meatballs ahead of time and freeze them. This is very convenient as it will save you time to prepare them next time. Place the meatballs before freezing on special parchment paper, which will prevent them from sticking and you can easily separate them.

I called this recipe the main one, since we cook it often, but now we prepare other recipes based on it. And so let's get started.

We will need:

  1. minced meat - 200-300 gr;
  2. potatoes - 3 pcs. medium;
  3. carrots - 1 pc;
  4. onion- 1 PC. average;
  5. greens - 20-30 gr;
  6. butter- 20 gr;
  7. vegetable oil - 2-3 tablespoons;
  8. water - 2 liters;
  9. salt to taste;
  10. Bay leaf- 1 PC;
  11. black ground pepper taste.

Step 1.

We used ground beef in this recipe, but you can use any. Peel and grind the onion on a grater or blender. 1/2 of a medium onion goes for 200 grams of minced meat. The butter must be melted or softened.

Step 2.

Add chopped onion, butter, salt and black pepper to taste to the minced meat, as well as a small amount of water, so the minced meat will be more juicy.

In addition to these ingredients, you can add a small amount of fried onions and carrots to the minced meat, grated cheese parmesan, chopped greens, finely chopped bell pepper.

After you knead the minced meat, throw it with all your strength on the board, then pick it up, and throw it again. Do this 10-15 times until it is smooth and smooth. This is to prevent the meatballs from falling apart during cooking.

Now we take the meat with a teaspoon, put it on the hand and roll the balls. In this case, it is better to moisten your hands with water, so less meat will stick to your hands. It is advisable that the meatballs are the same size, and you need to lay them out at a distance from each other so that they do not stick together.

Pour water into a saucepan and bring to a boil. Add bay leaves, salt to taste and black pepper, peas or ground there. You can also add allspice.

Put the meatballs in boiling water and bring to a boil again.

After you put the meatballs in the soup, foam will begin to appear, which must be removed. Stir the soup to keep the meatballs from sticking together. As soon as the meatballs float to the surface of the soup, it means they are ready.

Step 5.

The meatballs are boiled for 7-10 minutes in boiling water. Then we take them out of the water. We made the broth.

Step 6.

We clean the potatoes and cut them into cubes, or in any way convenient for you. Then put it in broth and bring to a boil.

In addition to potatoes, you can add rice to the soup, buckwheat, pasta, semolina or other cereals of your choice. Accordingly, pasta and semolina should be added at the end of cooking, and rice and buckwheat along with potatoes.

Step 8.

We taste the broth and, if necessary, add salt and pepper to taste. If you wish, you can add any more seasoning you need.

Step 9.

Now three grated carrots. Cut the onion into cubes. We will do "frying". Pour vegetable oil into the pan, heat it up, add carrots and onions. Fry until golden brown or translucent.

Step 10.

Now, after the potatoes have boiled, cook them for 10 minutes, then add our "frying" and then the meatballs.

Now we are doing the roasting. Grate the carrots and cut the onion into cubes. You can fry everything at the same time as in the first recipe. But more often I first fry the onions in a pan until half cooked, then add the carrots.

Step 7.

Now put the fried vegetables into the soup, salt and pepper. Mix everything thoroughly.

5 minutes before the soup is completely ready, do not forget to put spices and herbs in it, so it will become more aromatic and spicy. Dill, parsley, celery, green onions complement well the taste of soup with meatballs.

Step 1.
