Step by step cooking process

Step 1. Slice the chicken lengthwise into slices of the desired size, ideally thin, long slices. They fry quickly, plus they are very convenient to dip in sauces.


Step 2. Mix milk or cream with a spoon hot sauce, then fill the fillet with the resulting mass. Let the pieces soak well, you can even put them in the refrigerator for 30-60 minutes.


Thanks to this, the chicken meat will turn out to be very juicy and tender, even after frying in boiling oil.

Step 3. While the chicken is marinating, prepare the cups with the breading ingredients on the table. Combine flour with pepper, garlic, paprika and salt.


In another cup, beat 3 eggs, sprinkle with a couple of pinches of salt. Place a tray of breadcrumbs next to it. And here is also a wide dish for breaded fillets.


Step 4. Take a slice chicken meat shake slightly to remove excess milk, then roll in flour mixture. The flour should cover the fillets on all sides.

That is, we do not dip the chicken in crackers, we carefully sprinkle it on all sides, and then lightly press this layer of crackers. Thus, we will be able to "stick" as many crackers as possible on the meat, while avoiding the "smearing" of the first layer.

That's it, now we put this processed slice in a plate and repeat the same with the remaining fillet.

Step 7. In the meantime, pour oil into the pan and put it on the stove to warm up. You need to fry only then, the oil is heated to the desired temperature. You can check this by putting some small piece of meat or dough into the pan - it should sizzle.


We pour so much oil that the fillet slices can literally float in it, only then will we save the breading and get a reference crust.

If you are sorry to waste a lot of oil, then use a saucepan with a small diameter. With a small volume, we will get the appropriate oil level. But then the fillet pieces should be slightly shorter.

Step 8. Now dip the fillets into the oil one at a time. Place carefully so as not to be scalded by the drops of hot oil.


Cook for about 5-8 minutes depending on the thickness of the meat. As a result, you should get such a bright crust.
