I found the recipe on my favorite dromo forum in the culinary thread, wrote down "Cutlets with stuffing" in a book of ideas, and now I was looking for it for half an hour. original recipe to say thank you. I was looking for "cutlets", and in the name "muffins". Well, of course, what kind of cutlets are they? These are real cupcakes!

1. Finely chop the onion, fry a little in vegetable oil, mix with minced meat, salt and pepper to taste. Add our favorite spices (I added some ground cumin and coriander). IMPORTANT! We knead the minced meat well and beat it 40-50 times against the bowl - put it in a ball by hand and throw it down with a little effort, collect it, throw it - this is how protein threads begin to appear in the minced meat, it will begin to keep its shape and with further heating it will not crack and disintegrate.
Any mince can be used - mixed beef + pork, mono-beef, and even chicken - delicious in any version!
Onions, too, can not be pre-fried, but added to the raw minced meat. There will be more liquid when baking. Well, with fried - it's tastier!
2. Make the sauce (or pouring) - mix finely grated cheese, sour cream and an egg - the thickness and amount of ingredients can be varied to your liking, the main thing is that it can be spread / poured on top.

These patties were called meat cakes because they are convenient to bake in muffin tins - you can use silicone different forms and sizes - the cutlets themselves then jump out of there and do not stick to the walls.
In silicone molds with an interesting patterned bottom, the bottom becomes a beautiful top.
Therefore, I put a little pouring on the bottom, then laid out the minced meat, made a depression, into which I poured one quail egg, a little more minced meat on top and poured the sauce.
It is advisable not to fill the molds to the very top, or put them on a baking sheet or in another rectangular shape - when baking, fat can begin to drip and smoke is great in the oven.
You can also use paper molds, just put them in another silicone or metal mold, otherwise the piece of paper will open and you will not get a cupcake in a mold, but a flat cutlet on a corrugated paper mug))
5. It remains to bake our beauties for half an hour in an oven preheated to 200 degrees Celsius for 30 minutes.
Remove the cupcakes from the silicone molds, and if the molds are paper, you can put them on the table.

2. DELICIOUS MEAT BREAD WITH VEGETABLES
1. Making minced meat. We take chicken fillet and turkey fillet (in a ratio of 50% to 50 and pass through a meat grinder. You can add fresh onions to the minced meat (I did it without it this time), spices: salt, pepper to taste, a little white bun soaked in warm milk.
* I don't really like chicken fillets because of the dryness of chicken meat, so I cut the chicken myself and use boneless chicken meat in the minced meat.
2. Prepare vegetables. On a coarse grater, rub pumpkin and zucchini into different bowls. Salt and pepper to taste. We open canned corn.
3. Form a roll. Sprinkle the foil with breadcrumbs, put the minced meat on top, pumpkin on it, then zucchini, then corn and roll everything up. The roll can be kept in the refrigerator, or you can immediately transfer it to a baking dish, after removing the foil from the roll and greasing the form with olive oil.
* I use foil, but you can use cling film or baking paper to form the roll.
4. We send the roll to the oven 200gr. on average 40-60 minutes until cooked. In the process, it is advisable to turn the roll.
* Minced meat and filling in meat "bread" can be used any, so this is just one of the cooking options.
3.VILLAGE MEAT BREAD WITH DRIED TOMATOES AND CHEESE
For a 10x20 cm loaf:
500 g turkey (or chicken) fillet
150 g suluguni (feta or other cheese)
1 handful of sun-dried tomatoes
2 eggs
1/2 cup ground crackers (I have whole grains)
1 and 1/2 tsp salt
1/2 teaspoon ground pink pepper (or any other to taste)
1 tsp dry Italian herbs(basil, oregano, thyme)
2 tbsp milk
2 cloves of garlic
some fresh oregano (and the parsley seems to fit perfectly)
Grind the fillet in the processor until a homogeneous smooth mass, additionally "beat off" (typing the minced meat in your hand, "spank" it back into the bowl, only without fanaticism, so as not to scatter throughout the kitchen) from this the meat will become more tender and softer. Add milk and eggs, season with salt, pepper and herbs, squeeze out the garlic, knead.
Cut the cheese into small cubes, Sun-dried tomatoes squeeze slightly to get rid of excess oil, sprinkle with breadcrumbs, add to the minced meat, and mix thoroughly.
Preheat the oven to 200C, line the mold with baking paper, grease with oil, shift the minced meat, tamp so that there are no voids, level the top with a spatula moistened with water.
Bake for about 35-40 minutes, until the loaf starts to "move away" a little from the walls of the form, and does not brown appetizingly.
Remove from the oven, leave in the form for 5 minutes, cool, and you can start tasting.
Products for 20 servings (if you need a smaller number of servings, reduce the amount of products proportionally): 1.2 kg of minced meat, 600 g raw sausages, 300 g bacon, 3 eggs, 150 g crackers, 3 onions, 2 cloves of garlic, 1 tbsp. l. tomato paste, 1 tbsp. l. mustard, 2 tbsp. l. chopped parsley, salt, pepper, nutmeg.
Finely chop or chop the garlic and onion in a blender. Remove the sausages from the shell, chop and mix with the minced meat. Add eggs, crackers, mustard, tomato paste and stir well. Season with salt, pepper and nutmeg to taste. Cut the bacon into thin rectangular slices.
Preheat oven to 160 degrees.
Lightly grease a muffin pan (26 cm diameter), line the bacon pieces on the sides of the pan, fill the pan with minced meat (the bacon will be on the outside of our cupcake) and bake for 60 minutes.
Remove the pan from the oven, remove the cake, transfer it to a leaf and bake for another 20-30 minutes until the bacon is golden brown. When the meat cake has cooled, you can cut it into pieces and serve with cabbage, potatoes, green salad.
5 meatbread with tomatoes and ketchup
400 gr. minced meat;
- onion- 1 PC;
- 100 gr. cheese;
- tomato - 1 piece;
- egg - 1 piece;
- 1-2 tbsp. l. ketchup;
- pepper, cumin, salt and herbs at your request;
1. Finely chop the onion and sauté until light golden. After cooling, mix it with minced meat, spices, egg and salt.
2. Now cut about half of the cheese into cubes, into circles - a tomato. Introduce finely chopped greens and cheese into the minced meat, and knead it well again.
3. We spread the future loaf in any shape, coat with ketchup on top and spread the tomato slices, and leave in the oven at 230 degrees for half an hour. After a while, we take out the semi-finished product, sprinkle it with cheese and send it to the oven for the same amount.
4. Ready dish cool and garnish with any porridge, vegetables or pasta.
6 ham and squash cake
For this recipe we need:
zucchini (medium) - one piece
ham - three hundred grams
grated cheese - three hundred grams
raw chicken egg - three pieces
bell pepper- one piece
sour cream - three tablespoons
flour - three tablespoons
baking powder - one teaspoon
greens - one bunch
spices to taste
Cupcake preparation:
Beat the eggs a little and mix with three tablespoons of sour cream, then add salt and pepper. Mix flour with baking powder and carefully add to sour cream. Add cheese and zucchini grated on a coarse grater. Cut the pepper and ham into cubes, chop the garlic and herbs. Mix everything, put it in a cake pan (or in any other form) and bake in an oven preheated to two hundred degrees for forty to forty-five minutes. Cool the finished cake slightly and remove it from the mold. Delicious both hot and cold.
7. "Multi-colored" meat loaf
Pork pulp 0.7 kg
Canned corn 0.5 can
Canned peas 0.5 can
Purple onion 1 pc.
Carrots 1 pc.
Sweet pepper 1 pc.
Fresh parsley 0.25 bunch
Fresh dill 0.25 bunch
Olive oil 2 tbsp l.
Salt 1.5 tsp
Ground black pepper 2 pinch
To prepare this dish, we need: pork pulp, purple onion, red Bell pepper, canned peas and corn, carrots, dill and parsley, olive oil, chicken egg, salt and black pepper.
Cut the meat into pieces. Pass through a meat grinder. Chop the onion, carrots and bell peppers into small cubes, preferably the same size. Add the chopped vegetables to the minced meat. Add the peas and corn. Grind the greens, add to the rest of the ingredients, salt and pepper to taste. , mix our minced meat thoroughly so that all the ingredients are evenly distributed in it. Beat one egg. Stir the minced meat again.
Place in a rectangular cake pan. Lightly drizzle with olive oil on top, cover with foil or baking parchment and bake in the oven at 180 ºC for about 30 minutes, remove the foil and bake for about 10 minutes.
8. Meat "bread"
We need (in this case):
800 g pork
200g chicken breasts
1 large carrot
1 large onion
celery stalk
garlic (optional)
2 eggs
a couple of tablespoons of bread crumbs
fresh or dried basil
salt pepper
Grind onion and carrots in a blender and fry. I do not advise grating carrots, as it tastes better when they come in pieces.
Scroll the meat through a meat grinder or in a blender. Add crackers
eggs, basil (I have fresh), chopped celery, salt, pepper,
chilled frying and thoroughly, for about five minutes, we mix all this.
We leave for half an hour to connect the components.
We take either a square shape, or just form a "brick".
We put in the oven at a temperature of 180g. on
40 minutes. At the end, if necessary, add the temperature so that
"bread" is reddened.
9.Meat bread with dried fruits and nuts
600 g mixed minced meat (beef + pork)
1 medium onion
0.5 tsp salt
0.5 tsp black ground pepper
a pinch of ground nutmeg
1 egg
0.5 tbsp. broth
3/4 cup finely ground bread crumbs
0.5 tbsp. Jumbo raisins or prunes
0.5 tbsp. purified walnuts
a handful of peeled sunflower seeds
vegetable oil for frying
additionally a handful of nuts for sprinkling the top
Preparation
Peel, wash, finely chop the onion and fry in vegetable oil until golden brown.
Finely chop the walnuts. If we use prunes, then we remove the bones from it and cut it finely. We combine minced meat, fried onions, nuts, dried fruits, spices, breadcrumbs and broth and mix well.
Lubricate vegetable oil rectangular shape and put the minced meat in it. Sprinkle the top walnuts, slightly press them down.
We send the form with minced meat to an oven preheated to 175-180 degrees for 40 minutes. It is delicious to eat both warm with mashed potatoes, and cold, as an appetizer.
I never thought before that muffins can be made from minced meat, and they can be so delicious. Once I found the recipe on the Internet, I decided to cook it and did not regret it. It turns out a very tasty, juicy and nutritious dish of the most available products... We mix everything thoroughly, if the minced meat is not very plastic, then you can beat it off several times, but I, as a rule, do not do this.
Now we distribute the minced meat in the silicone muffin tins. We tamp it well, forming a depression.
For the filling, mix eggs, sour cream and grated cheese. Salt a little to taste.
Mix everything well with a fork and fill the grooves in the minced meat with this mass. We try not to fill the muffins to the very top, as a lot of juice will be released during the baking process, and the filling will rise with a "hat".
