How to cook a cupcake with yogurt - a recipe with a photo step by step with jam

First you need to measure the right amount of all the required ingredients.

Eggs should be broken into a deep container. Add granulated sugar to them.

Beat the mass with a mixer. The volume of the mass should increase significantly. Approximately 1.5-2 times. At the same time, the egg mixture brightens when beating.

Heat the curdled milk and pour into the beaten eggs. Stir well.

Add sifted flour. Beat again with a mixer or stir the flour thoroughly with a silicone spatula.

Add black currant jam to the dough. You should take only the thick part of the jam. An excessive amount of liquid in the dough will be unnecessary, because the cake will not be baked in this case.

Mix. The pie dough should be fairly thick and viscous.

Pour the finished dough into a greased dish. Smooth the surface with a spoon or spatula.

Bake in the oven at 180 degrees for 35-40 minutes. Readiness should be checked with an ordinary wooden stick or match. The oven door should be opened no earlier than 20 minutes after the start of baking. Otherwise, the cake will settle. The ready-made yogurt cake with jam can be sprinkled with powdered sugar.

Here is such a beautiful and tasty cupcake on a spacer

Among all the existing variety of homemade cakes, muffins are especially popular. The jam recipe will be presented in today's publication.

Option with milk and butter

This dessert is based on biscuit dough. Thanks to the presence of homemade strawberry jam, it acquires a pronounced berry aroma. These pastries can be served with breakfast, afternoon tea or evening tea. So that your family can taste the tender muffins (see the recipe for jam below), you should visit the nearest store in advance and buy all the required ingredients. To prepare these airy baked goods in your kitchen, you should definitely find:

  • Two chicken eggs.
  • Eighty milliliters of milk.
  • One hundred grams of granulated sugar and wheat flour.
  • Eight teaspoons of strawberry jam.
  • A quarter of a packet of butter.
  • Half a teaspoon of baking soda.

It should be mentioned that from the above amount of products, only six servings of a fragrant homemade dessert are obtained. If you are counting on more guests, then it is advisable to purchase twice as many ingredients.

Algorithm of actions

Raw chicken eggs are alternately driven into a deep bowl filled with sifted wheat flour. Pour baking soda there, previously quenched with vinegar or lemon juice. All mix well and set aside.

In a separate container, milk and butter are combined and sent to the stove. After boiling the mixture, the flour mass is carefully introduced into it, not forgetting to constantly stir the contents of the saucepan.

The resulting dough is poured into silicone molds so that they are no more than a quarter full. Put half a teaspoon of jam on top. Then some more dough is added to the molds and sent to the oven. Bake a recipe with a photo of which is presented in today's article, at one hundred and eighty degrees for twenty-five minutes.

Sour cream option

Using this recipe, you can prepare a delicious homemade dessert relatively quickly and without unnecessary hassle. In this case, you will need a set of products that is fundamentally different from the previous option. Therefore, before you start working with the dough, be sure to make sure that you have in your kitchen:

  • Half a glass of blackcurrant jam.
  • One hundred and eighty grams of margarine.
  • A glass of sour cream and granulated sugar.
  • A pair of chicken eggs.
  • About one and a half glasses of flour.
  • Half a teaspoon of baking soda.

Due to the presence of currants, with jam can be found in this article) acquire a pleasant slightly sour taste.

Cooking technology

In a deep bowl, combine sugar, raw eggs and pre-softened margarine. Beat everything well with a mixer. Sour cream, soda and pre-sifted wheat flour are added to the resulting mass. All are thoroughly mixed until smooth.

Put one tablespoon of the resulting dough into molds greased with vegetable oil. Place a little currant jam on top. After that, the molds are again filled with a small amount of dough and sent to the oven. Cupcakes are baked (the recipe with jam is presented just above) at one hundred and eighty degrees for half an hour. The finished dessert is optionally decorated with powdered sugar or fresh berries.

Option with kefir

This is a very simple and affordable dessert. For its preparation, expensive scarce components are not needed. To bake delicious and on kefir with jam, the recipe for which can be found below, you should have at your disposal:

  • Two chicken eggs.
  • A couple of glasses of wheat flour.
  • Two-thirds of a glass of sugar.
  • Half a teaspoon of baking soda.
  • Two hundred milliliters of kefir.
  • A teaspoon of baking powder.
  • Half a glass of vegetable oil and any jam.

Process description

Eggs are beaten with sugar and combined with kefir. Mix everything well. Then vegetable oil is poured into the resulting mass and beat again with a mixer. After that, sifted wheat flour, baking powder and soda are poured into the same container. Everything is thoroughly mixed until a homogeneous creamy mass is obtained.

Any jam is added to the almost finished slightly liquid dough and beat again using a mixer operating at medium speed. The resulting mass is poured into a mold greased with any vegetable oil and sent to the oven. The product is baked at one hundred and eighty degrees for about forty-five minutes. If you have a round shape at your disposal, then the residence time in the oven should be increased to one hour. Readiness is checked with a toothpick. Now that you know more than one interesting recipe for cake with jam in the oven, you can treat your family with budget homemade desserts much more often.

We take without asking a glass of seedless jam (and if you are especially gifted with teeth, you can with seeds), and add a teaspoon of baking soda to it.

Mix well and wait for 5 to 20 minutes. The mixture should foam.

Moreover, the old, already "thoughtful" jam (that is, it has begun to acidify), gives a more abundant foam, and, consequently, a more fluffy dough.
Add a glass of kefir ...

Half a glass of sugar ...

And 2-2.5 cups of flour.

The amount of flour depends on the liquid of the mixture to which it is added. If the jam is very liquid, and even kefir is 1% or fat-free, then more flour will go away (2.5 cups).

Knead everything thoroughly until a homogeneous mass is obtained.

In this case, the incomprehensibly unpleasant color of the dough is caused by the used blackcurrant jam.

Gently pour the finished mixture into a container.

If you cannot do this carefully due to the high coefficient of curvature of the arms, then I recommend downloading utilities that alleviate suffering.

We put the device filled with "meaning" in a preheated oven on medium (or slightly less) fire. Since for the stove from the vendor "Karpaty" the program that measures the temperature was not found by me even in Yandex, I cannot indicate the required number of degrees. We are waiting ... 35-45 minutes.

The necessary and sufficient criteria for readiness are: the lag of the edges of the product from the sides of the device and the absence of sticky dough on the prongs of the fork, when trying to pierce the middle.

After tipping (not literally) the finished cake from the pan onto the board, it needs to be allowed to cool.

The cupcake is ready to eat.

Cut the cake in half as follows:

We make a cream, in our case we used a glass of sour cream and 2 tbsp. tablespoons of sugar.

At the bottom of a dish of a suitable size, spread 1-2 tbsp. tablespoons of cream ...

And we spread both halves of the cake, smearing them with a sufficient amount of cream.

In my school years, we called this cupcake "Student" (or "Student"). Because it is easy and simple to prepare. Its preparation requires simple and affordable products, the most important thing is kefir and jam.

And how to cook it - my sister's classmate first showed me when we came to visit her.

She quickly mixed everything on the kitchen table, dumped the mass onto a rectangular baking sheet, sent it to the oven - and an hour later we were already enjoying a not quite ordinary (in appearance), but very tasty cake.

Many years later, I remembered this recipe in order to show it to you.

I already used a baking sheet not an iron rectangular one (as in childhood), but a round and silicone one (very modern). Then the cupcake will win not only in taste, but also in appearance (see for yourself in the photo below).

The recipe is really simple.

We will need:

  • 3 eggs,
  • 1 cup granulated sugar
  • 1 glass of kefir,
  • 3 tablespoons of jam (black-currant or pitted cherry),
  • 2.5 cups flour
  • 3 tablespoons of vegetable oil
  • 1 bag of baking powder,
  • salt on the tip of a knife (many housewives do not put salt in muffins, but I put it, because it seems to me that it tastes better).

I break 3 eggs into a bowl:

I add salt on the tip of a knife and 1 glass of sugar:

I mix a little and add 1 glass of kefir and 3 tablespoons (with a slide) of jam:

I added blackcurrant jam because I have a lot of it. My mother cooks it for us almost every year - it is very tasty and healthy. But I especially love to add it to the cake, because it gives it an amazing sourness.

And kefir, in turn, also will not let us get fed up with an excess of sweet (it also adds natural acid to the taste).

We mix kefir and jam with a mixture of eggs and sugar:

The mass acquires a beautiful lilac veined color (sorry, the photo was not quite clear).

Then I add 2.5 cups of flour:

On top of a hill of flour I pour 1 sachet of baking powder for the dough (they say it needs to be added to the flour).

I already started kneading the dough, but then I remembered that I still need to add 3 tablespoons of vegetable oil:

Well, that's it. Now you can stir everything calmly.

I kneaded the dough with a regular spoon (no broom, no mixer) - where did the students get the mixer from?

In principle, it was not difficult. And here we have such a beautiful mass for a cupcake:

In time, the whole process took 5-10 minutes.

Now you can pour it into the mold (I pre-coated the walls of the mold with vegetable oil - just in case):

And we send our still raw and liquid cake to the oven.

We will bake it for 50-60 minutes at a temperature of 180 degrees.

And so, after an hour, I get our hero, who has turned a little green on the surface (he somehow reminds me of the face of a very black negro) - probably, it is kefir foam that gives such a shade.

But if you take the cupcake out of the mold, you can see how beautiful it really is:

A real royal dish (reminiscent of a royal headdress, right?).

How much does it cost to make a cupcake on kefir with jam

Let's calculate what the student kefir cupcake cost us.

3 eggs cost about 15 rubles
1 glass of sugar - 6 rubles
1 glass of kefir - 8 rubles
3 tablespoons of jam - 25 rubles (if you buy it; your own jam, of course, will cost less, no more than 10 rubles)
2.5 cups flour (this is about 400 g by weight) - 10 rubles
baking powder for dough - 16 rubles (if you want to reduce the cost of this indicator, then instead of baking powder you can use 1 teaspoon of soda slaked with vinegar - then it will cost you no more than one ruble)
3 tablespoons of vegetable oil (60 grams) cost about 5 rubles

In total, making a student cake on kefir will cost you a maximum of 85 rubles, a minimum (if you use your own jam and soda instead of baking powder) - 55 rubles.

And considering that it turns out to be quite weighty (I got it weighing 1 kilogram 90 grams) - this is not only tasty, but also economical baked goods.

I treated my mom and dad with my cupcake, my husband ate it, my youngest daughter has been eating it for two days now - and it is not over yet.

This is the kind of food I respect very much - which is easy and quick to prepare, which is cheap for the money, and which can be eaten for a long, long time.

After my daughter said that she really liked this cupcake, I realized that when she eats it, she’ll make another one like that.

Calorie content of kefir cake with jam
