Various berries are used for pickling: cranberries, red currants, you can mix currants with cranberries, you can take black and red currants. But I liked the option with lingonberry marinade more than anyone else!

2-3 kg pork
200 g lingonberries
2-3 cloves of large garlic
1-2 teaspoons of black peppercorns
salt

To begin with, for the preparation of the marinade, I tried to use different berries: cranberries, cranberries with lingonberries, red currants, black currants, kiwi. Each time it turned out to be practically a new dish with its own taste, but I liked the option with lingonberries the most.

Cooking the marinade. If the lingonberry is frozen, then it must be thawed and kneaded. Add crushed garlic, pepper, 1 tablespoon of salt, mix.

We take pork meat (the back or neck will be better). We make cuts and grooves in the meat. We push the marinade there. Salt the meat and coat with the remaining marinade. We wrap it in cling film and put it in the refrigerator for a day. I put the finished meat in foil. I leave the top open. We put in the oven for 1.5-2 hours, first for 10-15 minutes, the temperature is 220 degrees, then we lower the temperature to 170 degrees.

Baked pork with lingonberry sauce - tender, juicy dish for a holiday or family celebration. As you know, the taste of pork goes well with the tastes of berries and fruits. In this case, apples and lingonberries give the meat a unique taste and aroma. Spicy sweet and sour sauce will be a pleasant addition.

Ingredients

To cook pork with lingonberry sauce, you will need:

700 g of pork pulp;

150 ml of red wine;

3 tbsp. l. lingonberry sauce *;

1 tbsp. l. olive oil;

1 large onion;

2 large apples;

5 allspice peas;

salt, black ground pepper, Bay leaf, nutmeg - to taste.

* can be replaced fresh berries lingonberries, cherries or currants - to taste.

Cooking steps

Pour pork with this lingonberry marinade and leave in the refrigerator for a day.

About an hour before baking, remove the meat from the refrigerator. Cut the apples into pieces, remove the core. Put the pork in a roasting sleeve along with onions and marinade, add chopped apples, tie the sleeve tightly. Put in an oven preheated to 200 degrees and bake for 30 minutes. Then reduce the temperature to 180 degrees and cook for another 1 hour.

Remove the finished pork from the sleeve, carefully drain the juice along with apples and onions, remove allspice and bay leaves.

Delicious, soft and juicy pork baked with lingonberry sauce and apples is ready.

On Friday, in the middle of the day, I had to go to the shopping center on business, since it is a couple of stops from work. Well, while I was driving, I decided to go straight to the hyper and look for something for dinner. A good piece of pork caught my eye (which, as the sign said, was never frozen), in general I took it. Since summer, there has been a bag of lingonberries in the freezer, but lingonberry sauce for meat is our everything!
Briefly speaking:

Pork neck- 1 kg (for 4 servings)
Cowberry- Cup
Orange
Gin- 30 ml
Cane sugar- 2 tablespoons
Cinnamon

Since lunch, my meat was already breathing at room temperature, so he didn't have to lie down extra. I just cut it into 4 pieces, peppered it well on all sides and let it sit for 5-10 minutes while the grill pan warmed up. Do not forget to boil more potatoes for a side dish during cooking

Heat the sauce until thick. We catch the spices. With a blender, figach all this into a homogeneous mass (this action is optional).
