Kvass was the favorite drink of the Russian people at all times.

But few people know that kvass is prepared not only from flour and malt; juices from natural ingredients, fruits and berries can also become the basis of an acidic drink.

Miraculous properties of kvass

This tonic drink perfectly refreshes and has a beneficial effect on the body:

  • Normalizes the work of our stomach and intestines, as well as digestion in general;
  • Removes unnecessary harmful substances;
  • Has a diuretic effect;
  • It is a natural remedy for disease prevention.

What are the benefits of the components that make up birch sap?

The traditional drink of the ancient Slavs, for whom birch was a special tree, was kvass. To this day, birch is associated with something originally Russian.

The Slavs worshiped not only the tree, but also those gifts that it gave.

Birch sap is a real treasure, it stores substances that have a beneficial effect on the body, it contains:

  • Organic acids;
  • Enzymes;
  • Calcium salts;
  • Magnesium;
  • Iron;
  • Vitamins and minerals.

Birch sap improves blood circulation and restores the body after a long winter; it is especially useful in spring, when people suffer from vitamin deficiency.

This natural drink serves as an excellent basis for kvass, as it does not lose its beneficial properties during the fermentation process. This is a great alternative to unnatural preservation of the drink using artificial preservatives.

If you doubt the naturalness of the juice that flaunts on store shelves, and are ready to go into the forest, then arm yourself with a sharp knife, a canister, and remember some simple rules.

  1. You cannot choose a young tree to collect a "birch drop";
  2. At night, the movement of the juice stops, so you need to go to the forest in the morning;
  3. The birch tree that grows under your window will not work. The tree should be looked for in the forest or in places remote from highways and large settlements (trees absorb harmful substances that poison the air);
  4. The circumference of the birch should be approximately 25 centimeters;
  5. To extract the juice, you need to make a notch (cut) in the trunk at a height of half a meter from the ground and insert a groove there;
  6. Having collected the juice, be sure to cover the incision with dirt or moss.

In early spring, together with the end of frost and an increase in temperature, sap flow begins, it is at this time that lovers of this drink begin to collect it. In order to determine its beginning, you should carefully make a small indentation with an awl, about 5-7 cm. A drop of birch sap that appears means that you can start collecting it.

The choice should be stopped on a birch, the trunk of which is at least 25 cm. On a tree with this size, there is only one cut for collecting sap. For every additional 10 cm, 1 hole can be added to the barrel diameter. If you do not follow these rules, you can ruin the birch.

Advice!It is better to collect birch sap during the day, since sap flow slows down at night, as a result, a little less will run into the bottle than we would like.

To make an incision for collecting sap, it is better to choose the southern side of the tree, at a height of 50-60 cm. Insert a special boat-shaped groove into it. From one tree you can collect from 3 to 7 liters of juice per day. After collected, it is necessary to cover the incision with dirt or moss, otherwise the liquid will continue to drain, and the birch may dry out.

It is more convenient to collect juice in a plastic container, but for storage it is better to pour it into glass bottles, which will preserve the healing properties of the drink.

Advice! To collect birch sap, you should not choose a young tree or one that grows outside the window. Birch should be looked for away from settlements and roads, as trees tend to absorb all harmful substances in the air.

  • Raisins - a handful (about 50 g);
  • Coffee beans - the same amount as raisins.

Recipe:

  1. Lightly fry the coffee beans in a dry frying pan.
  2. Dry Borodino bread in the oven.
  3. Rinse and dry the raisins.
  4. In a three-liter jar, put the raisins, bread and coffee beans, add sugar. Fill everything with birch nectar.
  5. Take a rubber glove and pierce it in one place with a needle. Pull a glove over the top of the can and place it in a warm place.
  6. After some time (2-3 days) the glove will start to "vote", that is, it will rise up - it means that the fermentation process has begun.
  7. Wait until the glove "falls off", strain the drink and put it in the refrigerator.

In a couple of days, such kvass will be ready for use.
