  • Cherry syrup or juice - 400 ml.
  • Semolina - 2 tbsp. l.
  • Lemon juice optional.

How to make a lean cake:

At the very beginning, we take the cherry in syrup, put it on a sieve, press the berries a little so that the syrup runs well. I use canned cherries, in which the syrup is very concentrated, so during the preparation process I will dilute it with water to the required volume. But you can take absolutely any cherry, replace the syrup with ready-made juice. For example, you defrost a frozen berry, put it in a strainer, strain it out. The resulting juice can also be diluted with water, but not too much, the cake should have a cherry note. Trust your taste, in the future when preparing such a lean cake, you will understand what concentration the juice should be.


So, first we cook the cream so that we do not wait until it cools down later. Pour cherry syrup into a saucepan, put on fire, add sugar if necessary. Try it and do it to your liking. The liquid boils, pour out a little semolina so that it does not come in lumps, we constantly interfere. Cook until the cereals are cooked for about ten minutes. The liquid thickened, became like a jelly. Be sure to try it for sweetness, and decide whether to add sugar or not. It turned out too sweet, pour in the juice of squeezed lemon to your liking, but if the cherry juice is already sour, this is not necessary. Cover the pan with a lid and set aside to cool to room temperature.


Now, let's do the test. In a separate container, mix flour, sugar, baking powder, cocoa, vanillin. The amount of sugar depends on the sweetness of the juice you use. I don't add it at all, my syrup is pretty sweet so. Mix syrup with butter, add to flour mixture, and stir well. The dough turns out to be liquid, do not worry, it should be so. Cover the bottom of the mold (21 cm in diameter) with baking paper, grease with oil, pour the dough into it. In a preheated oven to 180 ° C, we send to bake for 45 minutes.


And now let's get down to the fun part, whipping the cream. When I prepared such a lean cake for the first time, for me, I think, as for you now, this process was mysterious. How does an ordinary cherry semolina porridge turn into an airy cream? It turned out to be very simple. So let's take a look at this magic. The cream has cooled down, look how thick it has become.
