Preparing the dough takes a few minutes, so before starting the process, you need to put the oven to heat up to 180 degrees.

The main difference in making muffin and muffin dough is the base. For fluffy muffins, beat softened butter and sugar. In our case, sugar and eggs.

Products for the preparation of such baked goods do not need to be warmed up at room temperature in advance, so we weigh and measure the right amount products and proceed.

Break two eggs into a saucepan and add sugar.

Dough for muffins, muffins, as well as baked goods made from liquid or semi-liquid dough, which is then distributed into forms, is best done in a saucepan with a handle, so it will be much more convenient to lay it out.

Place the butter in the oven in a small suitable container to melt. At maximum speed, beat the sugar and egg mass with a mixer until a fluffy creamy mass for 2 minutes.

Cool the melted butter a little and, continuing to beat the sugar and eggs, pour a thin stream into the future dough. Add flour, vanillin and baking powder, stir and then beat until smooth.

Add milk in two stages, whisking each time until smooth. The dough should be the consistency of thick sour cream.

Prepare baking tins for portioned baking. Insert paper cups inside.

It is not necessary to use paper cups, but there is a reason. Portion baked goods are usually hand-picked and will be hygienic in the cup. Besides, the presence of a paper cup will insure you against sticking of products to the molds, they will easily fall out of them and look beautiful on a serving platter.

Add berries to the dough and mix quickly!

Divide the dough into prepared forms, filling them by 2/3, taking into account that the products will rise when baking. Send the forms to the oven.

If the recipe uses frozen berries, then you do not need to defrost them in advance! Conversely, the less time they spend at room temperature, the better. They took it out of the freezer, added it to the dough, quickly mixed it, distributed it into the molds and rather into the oven - this is a win-win strategy for success.

Bake on a medium oven shelf for about 20 minutes. Check the blush and bring it to the desired color level. Willingness to check with a wooden skewer or toothpick. Take the molds out of the oven, place the items on the wire rack and cool until warm.

The easiest serving option will be the same as for cupcakes. The easiest way is to sprinkle the muffins with powdered sugar. It can be mixed with coconut flakes or sprinkle layers with cocoa, it will be very unusual and beautiful.

From the specified volume of dough, 12 pieces are obtained.

I suggest preparing a quick and delicious berry cake for a family tea party. Today we will use frozen blueberries as a filler.

It is so great when there is a stock of berries in the fridge at any time of the year! I never miss an opportunity to replenish my supplies, because frozen berries do not lose their useful properties and does not lose vitamins, and some varieties of berries, on the contrary, increase the content of vitamins - for example, black currant in the process of freezing increases the content of vitamin C in itself three times, I do not know at the expense of what, but this is a proven fact.

In the proposed recipe, you can use any berries or pieces of fruit you have - all housewives know that any recipe is not a dogma, but only a guide to action!

So, get the food you need for making a frozen blueberry muffin.

Break the eggs into a deep bowl.

Add granulated sugar.

Whisk the egg and sugar mixture well with a fork or hand blender until bubbles appear.

Now add sifted flour, add baking powder.

Add vanilla sugar and a pinch of salt sunflower oil and stir the dough well.

You don't need to defrost blueberries until the end - while you were making the dough, they thawed slightly, mix them with a spoonful of flour.

Add blueberries with flour to the dough. Mix gently.

Pour the dough into a greased pan.

Bake in an oven heated to 180 degrees for 30-50 minutes - the baking time, as always, depends on the form in which you will bake and on your oven. I took a cake pan, which is quite deep and narrow, so to bake the cake, I had to hold it in the oven longer than in the usual round wide shape, for example.

Check the readiness with a wooden skewer, piercing the cake in the center. Do not remove the baked goods immediately after switching off the oven so that they do not settle. Wait 10 minutes for the oven to cool down gradually and remove the cake pan.

The frozen blueberry cupcake is ready! Cool it down and cut into portions.

To serve, you can sprinkle the blueberry muffin with icing sugar.

Enjoy your tea!

Recipe number 1
Ingredients:
  • chicken eggs - 4 pieces.
  • butter - 150 grams.
  • sugar - 150 grams.
  • wheat flour - 250-300 grams.
  • blueberries - 200 grams.
  • baking powder for dough - 2 tsp.

The baking powder in this test can be replaced with soda quenched with vinegar: you will need 1 tsp. Before preparing the cake, I advise you to do the preparatory work: remove the oil from the refrigerator to soften it, and rinse and dry the blueberries. It is best to place the blueberries on a flat surface covered with gauze or cotton cloth after rinsing. But keep in mind that this should be a simple fabric that you do not mind: the berries will leave purple marks on it.

How to make the best blueberry muffin:

1. Place the softened butter in a bowl. Add sugar to it immediately and mash with a fork. You should have something like a smooth cream.

2. Add eggs to the butter, one at a time. That is, break one egg first, knead the mass, then add the second egg and stir again. And so - until there is a homogeneous liquid mass in the bowl.

3. In a separate bowl, stir the flour and baking powder, and then add the dry mixture to the butter mass. Stir these pieces of dough. As a result, it should turn out not too cool, but not batter: only then the cake will be baked evenly and the center will not remain soggy.

4. Add dry blueberries to the dough and stir well.

5. Grease a baking dish butter and sprinkle it with a spoonful of flour. Put all the blueberry dough in a mold, and flatten the top of the dough with a spoon. Place the dish in the oven (or an electric oven - it all depends on which baking technique you have) and bake for 40-60 minutes at 180 degrees. The cooking time depends on your technique: in too "roasting" electric ovens of the Soviet type, it takes even less than half an hour for a similar muffin with blueberries.
