It is better to take round-grain rice for meatballs. Ideal for sushi rice. He just stands in my photo.
Rinse the rice to clean water, pour it into a saucepan with a thick bottom, add water, covering it by 3-4 mm. Bring to a boil, boil for about 3 minutes or a little more so that the rice takes up all the water. It is this semi-cooked rice that we will use.

Finely chop the onion.

Grate the carrots on a medium or fine grater.

Fry the onions in a preheated pan. My mom always does it in butter. But if you are used to doing it on vegetable, it will turn out no worse. This moment is not fundamental.

Add carrots, fry a little more with onions.

A little about minced meat. In order for the meat to retain the maximum useful properties, it must be defrosted as quickly as possible. The ideal option is to use chilled meat, making minced meat out of it. But if the meat is from the freezer, defrost it in the microwave. I prepare the minced meat for future use, then take out a portion, partially defrost it in the microwave, and then simply mix it with hot semi-finished rice. So the rice cools down and the meat thaws while we deal with onions and carrots.

Step 1: prepare the chicken fillet.

We thoroughly rinse it under trickles of cold running water, dry it with paper kitchen towels, put it on a cutting board and use a sharp kitchen knife to cut off cartilages and a thin film from the meat.

Step 2: chop the chicken fillet.



Then chop the chicken into small pieces up to 2-3 centimeters in size and chop them in any convenient way. For example, we pass it through an electric or manual meat grinder. Although you can grind with a food processor or, in my case, a stationary blender at the highest speed. We transfer the resulting minced meat into a deep bowl, rinse the kitchen appliance, dry it and put it back on the countertop, it will still be needed.

Step 3: prepare the vegetables.



Now using a new knife, peel the onions with carrots. Thoroughly rinse them from the sand, dip them with paper towels, send them to a clean board and cut them into small pieces up to 1 centimeter in size.

Step 4: chop the vegetables.



We act with vegetables in the same way as with chicken, that is, we pass them through a meat grinder, but twice, or we grind them with the help of the other above kitchen appliances, but at medium speed to small pieces. If you have chosen one of the last options, then you should not be zealous so that the vegetables do not turn into mashed potatoes! At the same time, turn on the oven for 180 degrees Celsius and heat 200 milliliters of purified water in a kettle.

Step 5: prepare the minced meat.



Then we transfer the chopped carrots and onions into a bowl with chopped chicken fillet. We add round-grain rice boiled to full readiness, a chicken egg without shell, sifted wheat flour and a little salt, which is not worth using in large quantities, it is quite harmful for a child, as, in principle, and an adult body. If desired, season everything with finely chopped or dried dill or parsley, mix the minced meat with a tablespoon until smooth and proceed to the next step.

Step 6: prepare the gravy.



Pour boiling water from a kettle into a clean deep bowl. After a few minutes, when the water becomes warm, add sour cream and a tablespoon of juice from the tomatoes indicated in the ingredients to it, and if there are none, then you can replace this product with a drop of tomato puree or not put it at all. We mix everything until smooth - a tasty, aromatic and harmless filling is ready!

Step 7: form baby chicken meatballs.



After that, we moisten the palm in running water, put a full teaspoon of rice-chicken mixture on it, form a small ball up to 2.5 centimeters in diameter from it and send it to the bottom of a non-stick, or better heat-resistant baking dish. In the same way, we form the rest of the meatballs and distribute the meat balls at a short distance from each other, one centimeter of free space is quite enough.

Step 8: prepare baby chicken meatballs.



Then we put the still raw dish in an oven preheated to the desired temperature and bake 10 minutes... Next, fill the meatballs with sour cream sauce, as well as tomato juice and bring to full readiness for another 18-20 minutes or until the gravy thickens.


Then we put on kitchen potholders on our hands and rearrange the form on the cutting board, previously placed on the countertop. Let the meaty yummy cool slightly, transfer a small portion to a small children's plate and taste it together with the baby!

Step 9: serve baby chicken meatballs.



After cooking, children's chicken meatballs are cooled and served warm to the baby. Mostly they are served without any side dish, because there is both meat and rice, but if you want to slightly refresh the dish, add a piece of fresh cucumber or your favorite vegetable puree from zucchini, eggplant, green peas, carrots, or something else to your child's plate. what does your child like best. Pediatricians advise giving children from the 1st year of life round grain rice. It boils well and becomes rather tender, not as dense as long-grain. It should be boiled in a large amount of slightly salted water, a little longer than usual, about 20-22 minutes. Then put it in a colander, rinse, dry and add to different dishes or use it as a side dish for the baby;

Do not use spices in children's dishes, they can cause an allergic reaction. Better add a little fresh herbs, dill, parsley, cilantro, a drop of basil, such herbs improve digestion, and some of them even relieve colic;

Do not forget that a portion of meat dishes in the diet of a child who only knows all the delights of delicious food should not exceed 100 grams;

Carrots can be replaced with zucchini, pumpkin or eggplant;

If you wish, you can add boiled rice or boiled buckwheat to meatballs, but since I cooked children's meatballs with gravy specifically for boiled rice, as a side dish, I decided to make pure meatballs. So that the minced meat balls do not disintegrate when stewing, be sure to add a chicken egg to the minced meat - it kind of adheres them. If the minced meat turns out to be a little thin, do not panic, but simply add a little wheat flour and knead it.

If your kids love tomato paste or tomatoes, you can also add them to the gravy, avoiding black pepper and garlic.

Put the minced meat in a deep container, beat in a chicken egg there, grate half of the peeled and washed onion on a fine grater, turning it almost into porridge so that the onion is not felt in the meatballs after stewing. Add 2 pinches of salt and 2 pinches of ground black pepper - this amount of spices will be almost imperceptible. Mix the minced meat thoroughly.

Peel the carrots and wash in water. Grate on a coarse grater, and cut half of the remaining onion into small cubes. Pass the vegetable slices in hot vegetable oil in a skillet, place it on the stove and turn on medium heat.

Add 1 cup hot water or broth and bring the contents of the pan to a boil. Shape the minced meat with wet hands into round meatballs and place in the gravy. You can cook as many meatballs as you like for your family. Cover the pan with a lid, simmer on medium heat for 10 minutes, then reduce heat and simmer for another 15-20 minutes.

The dish is considered ready when the meatballs are completely steamed.

Serve the baby meatballs and gravy hot by placing the gravy first on the plates and then the meatballs on top.
