Ingredients:
150 g ham
4 tablespoons boiled rice
2 tomatoes,
2 sweet peppers
5-6 green lettuce leaves,

150 g mayonnaise

Preparation:

Ginger dry (powder) (1 tablespoon);

Ingredients:
  • 5-7 medium potatoes;
  • 5 eggs;
  • 2 cans of champignons (or a pound of champignons);
  • half a glass of crushed walnuts;
  • grains of 1 pomegranate;
  • sour cream or low-fat mayonnaise;
  • salt to taste.

For decor:

  • baked beets;
  • carrot;
  • greenery;
  • corn;
  • a couple of cucumber slices.

  1. Boil eggs and potatoes and cool; if you chose fresh champignons - boil too.
  2. Grate the boiled potatoes on a large grater and put a square on the plastic. Tamp well, add a little salt and coat with sauce.
  3. Put boiled mushrooms on top of the mayonnaise, chopped not too coarsely. Lubricate with mayonnaise.
  4. Divide the boiled eggs into whites and yolks, grate, leave a couple of tablespoons for decoration, and put the rest on top of the mayonnaise and grease too.
  5. Put half of the pomegranate seeds, brush with mayonnaise and sprinkle with walnuts (you can leave a little for decoration).
  6. The contents of the cling film must be rolled up - raise one edge, separate from the film and wrap, then gradually wrap through the film. If the roll turns out to be imperfect - do not be discouraged, most likely it will not be visible under the decor. The roll is well tamped in foil and put out in the cold for several hours.
  7. Take the roll out of the refrigerator, remove the foil and put it on the dish in which you plan to serve it. Brush gently with a layer of mayonnaise.
  8. Grate the baked beets on the finest grater.
  9. Collect the cracker - diagonally from one edge of the roll to the other, lay out the baked beets, yolks, proteins, greens and again beets. You can upload it in any order, or you can use photos.
  10. Decorate the ends of the roll with the remaining proteins.
  11. Lay out the decor on one side - the effect of a firecracker explosion. Arrange the dill, corn, carrot, beet, and cucumber slices. You can cut a couple of stars out of carrots and decorate with the remains of grated yolk.

Herring canapes under a fur coat



For many, fish and vegetable salad is a traditional New Year's treat, and it is quite difficult to refuse it. Why not cook it in a new way for everyone? Canapes are small portioned sandwiches that are convenient to eat.

Ingredients for 6 servings:

  • 1 medium beet
  • 2 small potatoes;
  • 1 large carrot;
  • 2 herring fillets;
  • sliced ​​Borodino bread;
  • some chives or chives.

How to cook

  1. Boil all vegetables until tender, then cool and peel.
  2. Cut vegetables into slices no more than 0.5 cm thick.
  3. Blot the herring with a paper towel or a regular napkin to remove excess oil and cut into medium-sized pieces.

  7. Grate the hard cheese on a fine grater and sprinkle on the cockerel. Remove excess cheese from the plate (you can gently blow it off).
  8. Cut the beak and scallop from the bell pepper half, cut the rest into strips - so that you can decorate the plate with the resulting elements.
  9. To finish the cockerel - lay out the tail neatly (you can use dill), mark the wing, insert the beak and comb.
  10. Make some kind of grass out of dill on a plate, artistically scatter a few grains of corn, depicting a grain. Sprinkle a plate with grated walnuts.

A small life hack: if in the process of sculpting a rooster you stain the plate with mayonnaise or other ingredients, then you need to wet a napkin or cotton swab and wipe it gently, and so that there are no streaks, wipe it with another napkin dipped in a weak solution of vinegar.

  • Small beef tongue;
  • 1 large cucumber (smooth);
  • 1 sweet and sour apple (it is better to choose a firmer one);
  • 5-10 pieces of mini beets;
  • a small jar of capers;
  • lettuce;
  • 2 tbsp mayonnaise;
  • 1 tbsp hot (Russian) mustard;
  • 1 teaspoon lemon juice
  • salt and black pepper.
How to cook
  1. Rinse the tongue well, put it in a saucepan, pour boiling water from a kettle and cook for about an hour and a half (the cooking speed depends on the size of the tongue).
  2. While the tongue is boiling, you need to wash the beets (wash thoroughly, it is better to rub with a brush) and bake in the oven for 20 minutes.
  3. Cut the cucumber into strips - for this it is best to cut it diagonally into thin slices, then fold 3-4 slices and cut as thin as possible.

    Little life hack: so that the sliced ​​cucumber does not give excess juice in the salad, you need to put it in a colander and add salt - in 20-30 minutes the excess juice will drain from it.

  4. Peel and seed apples, cut into strips and sprinkle with lemon juice.
  5. Check the readiness of the tongue, and if it is cooked, remove it from the boiling water and put it in cold water to make it easier to clean.
  6. After two minutes, remove the tongue and peel, cut the meat into thin strips.
  7. Combine the chopped tongue, apple, cucumber and capers.
  8. Mix mayonnaise with mustard and season the salad.
  9. Serve on lettuce leaves with baked beetroot halves.

Lightness is needed in everything

Second course recipes for the New Year 2017


For this dish, you will need the following products: 1 kg of salmon fillet, 300 ml of cream no more than 10% fat, 150 g of cheese, 1 onion, salt and seasonings to your taste.

The first step is to make the sauce. Pour the cream into a small bowl. Add salt and seasonings to them. Condiments can be anything you like. If you add a little lemon juice to the cream, then the sauce will thicken and will resemble liquid sour cream in consistency.

Cut the salmon fillet into small pieces and put on a baking sheet, previously greased with vegetable oil. Pour the fillet with sauce and let stand for about 20 minutes. Then sprinkle the slices of salmon with grated cheese. Now you need to send the baking sheet to the oven, preheated to 180 degrees. The fish should be baked for 30-35 minutes.

For a side dish you will need: 10 large or 15 medium potatoes, 2 egg whites, spices, and olive oil.

First you need to make a light batter in which the potatoes will be cooked. To do this, beat the egg whites well. The potatoes must be cut into slices and mixed in the whipped egg whites. Then add all the seasonings to your liking. A small amount of olive oil is added to a baking sheet, and put the potato wedges. Sprinkle with herbs on top if desired. You need to bake potatoes at 220 degrees for about 40 minutes. while stirring the potatoes every 10-15 minutes.

Pork rolls with prunes and feta cheese


Ingredients: 1 kg of pork neck, 200 g of feta cheese, 200 g of prunes, 250 g of sour cream no more than 25% fat, 1 tablespoon of olive oil, 4 tablespoons of mustard with grains, 2 teaspoons of dried basil, salt and pepper to taste.

The first step is to prepare the prunes. To do this, it must be soaked in warm water to swell. Rinse the pork well and cut into longitudinal strips 2 centimeters thick (the meat should be cut across the grain) and beat well.

Stir the sour cream with butter, mustard, basil and spices. With this sauce, you need to grease each piece of meat on both sides. Let the meat brew for 10-15 minutes. Now you need to dry the prunes well and cut them into small pieces, also chop the feta cheese.

Now put the feta cheese and prunes on ¼ part of the pork and gently twist the roll. Rolls are laid out in a baking sheet and baked at 180 degrees for about an hour.

Products: 300 g of cod (you can fresh, or you can take canned), 7 potatoes, 3 eggs, 2 cucumbers, 1 bunch of green onions, 400 g of cheese, 1 red and 1 yellow pepper, 1 pack of mayonnaise and seasonings to taste.

Boil the cod, separate from the bones and chop finely. If you took cod in a jar or other fish, then just knead it. Mashed potatoes. Finely chop the eggs or grate them on a fine grater. Now you need to mix all the ingredients, seasonings and add mayonnaise so that you can roll up small balls.

Now you need to color the balls. To do this, chop the pepper, cucumber, green onion very finely into different plates. Each ball should be well rolled in one of the plates and put on a dish.

You can use any product for coloring the balls, it all depends on your taste preferences.
