Ingredients for a recipe for onion cutlets:

  • Onions - 6 heads (medium size);
  • Eggs - 4 pcs. (medium size);
  • Flour - 7 - 10 tbsp. l. (no slide);
  • Salt - 1 tsp;

For frying:

  • Vegetable oil - 5 tbsp. l .;

For gravy:

  • Tomato paste - 3 tbsp l .;
  • Salt - 1/2 tsp;
  • Boiling water - 100 g;
  • Sugar - 1 tbsp. l .;
  • Pepper peas - 5 pcs.;
  • Bay leaf - 1 pc.

How to cook onion cutlets, recipe:

1. As in the recipe - it is necessary to chop the main ingredient, that is, the onion. This can be done with a meat grinder, and with a blender, or just with an ordinary knife. But then you should understand that the amount of flour will also depend on the slicing.
It is advisable to chop the onion with a knife, then it will let out less juice. In this case, the slicing must be done very fine. Nothing will change in terms of ingredients, but it will take more time to cook onion cutlets according to the recipe. Flour for such cutting will take about 7 tablespoons.
If you chop the onion with a meat grinder, then it will release more juice and the dough may be a little thinner. Therefore, you will have to add a little more flour - 8 - 9 tablespoons.
Well, the third method of chopping is a blender. This will make the onion puree, which will take in about 10 tablespoons of flour.
Advice: When measuring flour with tablespoons, remove the slide.

2. Add the eggs to the onion and stir until the yolks separate.

3. Sequentially on a cutting board, rub the peppercorns with a rolling pin and add them to the onion along with salt.

4. Add flour in portions and gradually knead the dough with a spoon.
Advice: You should definitely watch the consistency of the dough. It should be much thicker than milk. Consistency like 15% sour cream. Onions may be juicier depending on the season. The amount of flour will also depend on this.
