Grechaniki is a truly Ukrainian dish, the main component of which is buckwheat. Food is prepared in a wide variety of variations. Chicken or ground beef, pork liver, boiled potatoes, fried mushrooms, grated cottage cheese, and various vegetables are added to it.
We offer two recipes with step-by-step photos: classic Greek people with minced meat and Greek people stewed in tomato sauce, also with minced meat.

Greek people with minced pork turn out to be especially tasty and satisfying, and sauteed vegetables make the dish more juicy. Buckwheat is pre-boiled or cereals soaked the day before (in the evening) are used. As a breading, flour, ground white bread crumbs, semolina or walnuts crushed into crumbs are used. Greek people are fried with minced meat in lard or vegetable oil.
From these ingredients, 6 servings of Greek people are obtained, which will take only 40 minutes to cook.

Ingredients

  • Minced meat - 0.4 kg;
  • Buckwheat - 1 tbsp.;
  • Onion - 1 pc.;
  • Carrots - 2 pcs.;
  • Egg - 2 pcs.;
  • Salt;
  • Ground black pepper;
  • Sunflower oil (for frying);
  • Flour (for breading).


How to cook Greek people with minced meat

The preparation of the main ingredients is the most important point. Buckwheat is the main product in this dish, so you need to carefully sort it out, remove excess debris and low-quality grains. Then rinse the cereal well, pour in two glasses of cold water and cook over medium heat until tender. Then remove the lid from the pan and leave the porridge to cool.


In the meantime, tackle the vegetables. Cut the peeled onion into small cubes. Also, peel the carrots and grate them.


Saute vegetables in sunflower oil in this order: pour a little oil into a frying pan, fry the onions until golden brown. Then add the carrots and keep the vegetables on moderate heat for another five minutes, until the carrots are juiced and soft.


Mix buckwheat porridge that has cooled down with minced meat. Knead the mass well with your hands.


Add eggs, salt and pepper to the minced meat.


Put the sautéed vegetables here. And so that buckwheat cutlets can be easily shaped, and they do not fall apart during frying, it is recommended to beat the minced meat well. To do this, take the minced meat in your hands and throw it abruptly onto a cutting board. Do this several times.

After the minced meat for the Greek people is completely ready for use, form medium-sized cutlets of the desired shape (round or oblong), bread each in flour.

Preheat the skillet. Sprinkle a few tablespoons of sunflower oil on it and fry the Greek people with meat over medium heat on both sides.


In conclusion, the toasted Greek people should be stewed. To do this, put the cutlets in a deep saucepan, pour 50-100 ml of water, cover the pan with a lid. Put it on low heat for 5-10 minutes, until all the water has boiled away.

For cooking, you can take any minced meat: beef, turkey or chicken. Our recipe uses blanched and then chopped tomatoes as a tomato sauce. You can also take simple tomato juice. As a last resort, you can also use tomato paste mixed with water.
To make the cutlets easier to form, buckwheat must first be boiled and then chopped. You can use a meat grinder to grind porridge. This is convenient if you do the minced meat yourself. Or you can use a food processor.



Send the minced meat into a deep container, salt it and lightly sprinkle with black pepper. Beat the egg into the container and add the already chopped buckwheat porridge there.


Peel and chop the onion. You can use the food processor again, or you can handle the task with a knife. Try to chop the onion as small as possible, then the Greek people will turn out to be juicier.

Add the onion to the rest of the ingredients and mix everything.


Form buckwheat patties. Their shape and size can be whatever you want. This will not change their taste. You can form cutlets in a traditional, slightly elongated shape.



Fry the Greek people in vegetable oil for literally 2-3 minutes on each side. The main thing is to form a golden crust. Do not simmer the cutlets for a long time in a pan under the lid, because they will reach readiness in the oven.


Chop the greens with a knife and add them to the tomato sauce.


Put the fried Greek people in a baking dish, pouring a little vegetable oil on the bottom.


Top the buckwheat cutlets with the herb and tomato sauce. Send the dish to the oven preheated to 200 degrees for half an hour.
