Potato wizards with minced meat in the oven

The Belarusian dish with the beautiful name "Kolduny" can be cooked entirely in a frying pan without using the oven. But considering that these are rather large cutlets consisting of raw potatoes and raw minced meat, it is the oven that will help to completely cook and make them tender, and in the pan we will just quickly give the sorcerers color and crust.

Minced potato wizards are prepared from the simplest products, without the addition of flour and eggs, which can create a problem during molding. But I will tell you how to solve this problem. Let's get started?

For the sorcerers, I prepared homemade minced meat from boneless pork ham with fat, with the addition of onions, garlic, eggs and white bread soaked in milk. As a seasoning for minced meat, I have salt, black pepper, paprika and coriander greens.

We need water to stew potato wizards with minced meat in the oven, the amount of water depends on the size of the baking dish.

Peel and finely grate potatoes and onions.

We collect the ends of the gauze and squeeze out so that the glass has excess moisture. Do not wring out too hard, the vegetable mass should not be too dehydrated.

Thus, we squeeze out the entire potato and onion mass. It is more convenient to do this in parts, but you need to act as quickly as possible so that the raw potatoes do not have time to darken. Add salt and pepper to the squeezed vegetable mass, mix.

We do not pour out the squeezed liquid, leave it alone for a few minutes so that the starch settles to the bottom. It is the starch that will help in the further formation of sorcerers.

Drain the potato juice carefully (it is no longer needed). And what do we see? Starch, which has settled at the bottom of a dense substance. Add it to the vegetable mass and mix with your hands, evenly distributing the starch.

It's time to mold the sorcerers, this can be done in any convenient way, I molded the products, helping myself with cling film. We spread a piece of film on the board, lay out the grated potato and onion mass, level it, creating a circle about 1 cm thick. Put a portion of minced meat in the center.

The size of the future sorcerers depends on your preferences, I got 5 large cutlets about a little larger than the palm of your hand.

Put a small "patch" of potato mass on the minced meat, then collect the edges of the film and form a cutlet filled with minced meat inside, slightly tightening the cutlet with your hands.

When all the sorcerers are formed, we strongly heat the pan, add vegetable oil, heat it a little more so that the oil is hot. The amount of oil depends on the diameter of the pan.

Put cutlets on a hot frying pan and fry over high heat until golden brown.

In parallel with the frying pan, turn on the oven to heat up to a temperature of 200-205 degrees. Prepare a baking dish by covering it with foil.

Turn the sorcerers over and fry the other side until golden brown. To keep the cutlets in shape, it is more convenient to turn over, helping yourself with two spatulas. It took me 2-3 minutes to fry each side.

We transfer the fried sorcerers to the prepared form, pour a little water on the bottom (water should only cover the bottom of the form).

Cover the form with foil and put the potato wizards with minced meat in the oven (preheated) for 35-40 minutes.

Belarusian sorcerers from potatoes with minced meat are ready.

Serve hot, garnish with herbs. Sorcerers are well served with butter or sour cream. I made the simplest sour cream sauce by mixing sour cream (20% fat) with coriander, salt and black pepper.
