Khinkali with meat - a step by step recipe with a photo at home

A very juicy, tasty and appetizing dish. It will saturate and warm. Traditionally, khinkali are made from mutton. But keep in mind, then the dish will be quite fatty. Therefore, we offer a recipe for khinkali with meat using pork and beef. Cooking them is not difficult at all!

Ingredient for making khinkali at home:

  • minced pork and beef in equal proportions 400 g. You can replace it with minced meat only from pork;
  • 1 large onion;
  • flour 2 cups;
  • water 1-1.5 cups;
  • salt 1 tbsp;
  • a mixture of ground peppers - added to taste. If desired, you can also add dry dill, parsley or cilantro to the minced meat.

Let's move on to cooking khinkali with meat at home. A step-by-step recipe with a photo will help you and make the whole process as accessible and understandable as possible!

1. Making the dough. Sift the flour directly onto the work surface, forming a slide. In the center we will make a hole-recess. Pour in ½ glass of water there. Add a little salt there and start kneading the dough by hand. It should be elastic and resilient. If necessary, water can be added during the mixing process. Leave the finished dough for 30-40 minutes. This is the ideal amount of time. If the dough will stand for an hour or more, it will lose its taste and quality, do not forget about it!

2. Let's prepare the filling. Finely chop the onion. Add it to the minced meat and mix slightly. Now add a little water or broth to the minced meat so that the filling is juicy. Stir lightly again. Finally, salt and add the desired spices. If you want spice, use 2-3 cloves of garlic, passed through a press. Mix all contents thoroughly. Minced meat should not be dry, but also not disintegrate from the amount of water.

3. Roll out the dough sheet. It should not be very thin, otherwise it will tear. Divide the dough into circles with medium-sized crockery with thin edges. They shouldn't be too big or too small. Roll each circle separately and put about 0.5-1 tablespoon of the filling in the center. Determine the exact amount based on the size of the mug.

4. We form khinkali. We collect the dough in folds, forming a bag. Pull the resulting tail in the center of the dough joint forward and twist it several times with a spiral.

5. Cook khinkali. This requires a large, wide saucepan. We place khinkali in hot salted water, wait for them to float up and from that moment we boil them for about 10 minutes more.

6. Serve the finished dish with chopped herbs and black pepper.
