Crispy chicken in sweet and sour sauce and batter

08.07.2021

My friends and I tried chicken in sweet and sour sauce for the first time in a Chinese restaurant. By the time it was served, we were firmly convinced that we would not eat a single bite - the sizes of the Chinese portions were not designed for Russian stomachs. Nevertheless, in a couple of minutes the crispy fillet dish was empty.

The recipe below is for one person. If you are going to invite guests, multiply all the numbers by the appropriate number.

Ingredients for Sweet and Sour Chicken

You will need:

  • chicken fillet - 300 g,
  • canned pineapple - 2 rings
  • bell pepper - 2 pcs.,
  • soy sauce.

For the sauce:

  • pineapple juice - ½ tbsp.,
  • ketchup - 1 tbsp. l.,
  • water - 3/4 tbsp.,
  • sugar - 1/4 tbsp.,
  • table vinegar - 1/4 tbsp.

For batter:

  • flour - 1 tbsp.
  • vegetable oil - 1 tbsp. l.,
  • corn starch - 1 tbsp l.,
  • 1 egg,
  • salt - 1/2 tsp
  • pepper to taste
  • water - 3/4 tbsp.

Progress

Sweet and sour sauce for chicken

1. Drain the juice from the canned pineapple and cut a couple of pineapple rings into thick slices.

2. Cut a couple of colored bell peppers into pieces of the same size.

3. Prepare the ingredients for the sweet and sour sauce.

4. Pour pineapple juice, vinegar and ketchup into a saucepan and stir.

5. Heat the mixture in a saucepan over medium heat. Once the sauce has boiled, turn off the heat.

6. Stir the cornstarch and water thoroughly.

7. Add the cornstarch and water mixture to the saucepan and stir.

8. Keep the sauce on low heat until thickened.

Sweet and sour chicken sauce is very variable. Someone adds a little garlic to it, someone, according to tradition, a tablespoon of soy sauce. Optionally, you can darken pineapple and pepper pieces in the sauce a little, add other vegetables or onions, or do without it.

Experiment, try and find the flavor that appeals to you the most.

Chicken batter

1.Prepare all the required ingredients. If you want a crispy, airy dough, use egg white instead of a whole egg.

2. In a separate bowl, combine flour, vegetable oil, cornstarch, salt and pepper. Add egg or egg white.

3. Mix the batter ingredients well.

4. Add water gradually.

5. Knead thoroughly. The batter should be thick.

Roasting chicken in batter

1. Cut the chicken fillet into 3 cm cubes, add a little pepper and salt.

2. Place the fillet in cubes in the batter.

3. Stir the chicken into the batter.

4. Heat vegetable oil in a skillet or wok. The temperature will be sufficient when small bubbles appear when the wooden stick is dipped in the oil.

5. Fry the chicken cubes until golden brown (about 10 minutes).
