Hello my dear readers! They say that "chicken meat cannot be spoiled." Do you know how to create a real culinary masterpiece out of it? I will tell you today what to cook with chicken breast. Fast and unusual. And I will definitely share a recipe that will pave the way to the heart of any man.

I'll start with a short educational program. Natural chicken breast consists of two loins with skin on the bone. Fillets that have already been cut are most often sold in supermarkets, so I will use these words interchangeably. White meat consists of 80% easily digestible protein and, due to its low calorie content (only 113 kcal / 100 g), it often forms the basis of the diet. Moreover, it is rich in vitamins (PP, A, B1, B2, folic acid) and useful trace elements such as iron, potassium, magnesium, phosphorus, zinc. Chicken meat is affordable and easy to prepare. But the main thing is that it does not get boring! It can be boiled, baked, fried, stewed, combined with different vegetables and sauces, each time achieving a completely different taste.

Original recipes for the holiday and every day

The fillet cooks very quickly. The processing is minimal - rinse and cut off thin films, which takes 5 minutes at most. For those who do not have time to mess around in the kitchen, but want something exotic, I have selected four simple recipes.

Chicken curry with rice

Put mustard and fenugreek seeds in hot oil, add ginger, hot peppers, onions and garlic, chopped tomatoes, turmeric, curry, coriander. Keep on fire until the onion is soft. Add water (you can take half and half of water and coconut milk), boil for 5-7 minutes. We send the sliced ​​breasts into the sauce and simmer until tender. Rice at the same time can be cooked separately.

Chicken breasts on a vegetable cushion

They are easy to cook in the oven or multicooker. And use any vegetables that are in the refrigerator. Carrots, tomatoes, zucchini, eggplants, potatoes will do. Chicken meat is in perfect harmony with cauliflower or broccoli. It will be delicious with mushrooms. Put the chopped vegetables in a baking dish, put the breasts on top (either whole or chopped), cover them with tomatoes and herbs and simmer over low heat for about an hour. Don't forget to salt and season!

Chicken fillet with pineapple

Rub the breasts with salt, paprika and black pepper. Boil the orange juice and cook until the volume is halved. Pour the breasts with hot juice, put pineapple slices on top and bake in the oven for 25-30 minutes.

Stuffed fillet

We cut the chicken breast lengthwise, but not completely. To get a "pocket". We rub the meat with salt and seasonings, put the filling in the cuts and fasten the edges with toothpicks. We bake in the oven on a greased baking sheet. What to put inside? Anything. Minced pork, liver pate, ham cheese, tomato slices with basil, pineapple.

  • baked apples stuffed with minced chicken;
  • chicken fillet with chestnuts;
  • fettuccine (pasta) with fillet and creamy sauce.

Secrets of boiled chicken and salads

Want a little but very important secret from my culinary friend? To make the boiled breast tender and juicy, it should be placed in boiling, slightly salted water with bay leaves. Such a boiled fillet is delicious in itself, and best of all it will "open up" in a fresh salad. Ideal for a second for a summer lunch!

Among the classic combinations, eminent chefs distinguish the following:

  • bell peppers, cucumbers, herbs, feta cheese;
  • tomatoes, mozzarella and basil;
  • rice and prunes;
  • quinoa and avocado;
  • champignons, onions and lettuce.

There are over 500 different types of chicken salads. My favorite holiday (by no means dietary) option is pickled mushrooms, canned corn, ham, pineapple, and mayonnaise. And with lettuce leaves, white bread croutons and grated cheese, you get the famous Caesar.

What to serve with? Side dishes and sauces

With side dishes, everything is simple. The best options for chicken breasts are rice, potatoes (especially mashed potatoes), buckwheat porridge. And to give a fresh touch and even completely change the taste of the dish, you can use a variety of sauces. The most popular ones are:

  • creamy;
  • cheesy;
  • garlic;
  • mushroom;
  • honey mustard;
  • dogwood;
  • tkemali.

Try this aromatic sauce for grilled breasts. Soak dried porcini mushrooms overnight, rinse and chop finely. Fry onions in butter, add mushrooms and cook for 5 minutes more. Add flour and mix well. Pour in milk or cream, bring to a boil (but do not boil) and immediately remove from heat. Proportion - for a glass of milk one onion, 100 grams of mushrooms and two tablespoons of flour.

Chicken Kiev: recipe from heartbreakers

Finally, I will give a signature recipe that no man can resist. It has been tested in practice - thanks to the "Kiev cutlets", two of my friends successfully got married.

You will need:

  • for one cutlet - one fillet (preferably half breast with bone),
  • butter (pre-cut into 10-15 g pieces and frozen in the freezer),
  • rice or wheat flour for breading;
  • milk;
  • dill, parsley, garlic;
  • salt, paprika and ground hot pepper;
  • vegetable oil for deep fat.

Soak the breast in milk for 5-10 minutes. We beat gently so that the meat does not break. Put on cling film or foil, sprinkle with herbs and seasonings. Put a piece of butter in the center and press the breast into a whole piece (like a pie). Thoroughly breaded in flour. I do not advise taking crackers! Fry in hot deep fat until light brown (3-5 minutes).

Serve cutlets on the table right away, "in the heat of the heat", but you can make semi-finished products in advance and freeze them in the freezer.
