In many families, the duck is associated with some kind of celebration or holiday. On such days, duck is most often baked with apples in the oven. The dish turns out, of course, incomparable. But today we will cook duck in a completely different way. We will stew it in our own juice. As for me, this dish is undeservedly classified as an ordinary one. However, it can compete with baked duck on the festive table.

Duck meat turns out to be very tender, juicy and with a pleasant aroma. It can be served with any side dish and salads. And in general, as for me, this dish is very convenient to prepare. Fried the meat, stewed it with different spices and the dish is ready.

I would like to give some recommendations on how to cook duck. First, the smaller the duck pieces, the faster the dish will cook. Secondly, you should not pour a lot of water. The duck should not be boiled, it should be stewed. Therefore, it will be enough that the water only covers the meat of the duck. Thirdly, the duck itself is very fatty, therefore, before cooking, it is necessary to remove the yellow thick layer of fat near the bottom. Then the gravy will not be cloyingly greasy.

Ingredients for Stewed Duck in Its Own Juice

  • Half duck carcass - 1500 g
  • Onions - 2 pcs.
  • Garlic - 2 cloves
  • Bay leaf - 3 pcs.
  • Allspice peas - 3 peas
  • Paprika - 1 tsp
  • Ground nutmeg - 1 tsp
  • Salt to taste - 1 g
  • Ground black pepper to taste - 1 g
  • Vegetable oil for frying - 10 g
