Duck is a rather rare dish on our tables, prepared mainly for the holidays. The meat of this bird has a pronounced taste and aroma, but you need to know how to cook it correctly. Quite a lot of different dishes can be made from duck - soups, pilaf, roast. But for novice cooks, it is best to stop at stewing meat, because when baking a whole carcass, it can turn out to be dry. Therefore, we will look at how to deliciously cook duck in pieces.

Duck stewed in red wine with spices

If you cook duck in chunks with juicy foods, aromatic spices and herbs, it will turn out to be incredibly tender and aromatic.

Ingredients:

  • 1 duck carcass;
  • sweet onion - 2 pcs;
  • carrots - 2 pcs;
  • dry red wine - 0.5 l;
  • dessert wine - 150 ml;
  • spices: bay leaf, celery, thyme, rosemary, black pepper - to taste;
  • tomato paste - 2 tbsp l;
  • butter or vegetable oil.

How to stew a duck in slices:

  1. Wash the duck carcass and cut into separate pieces.
  2. We clean the vegetables, grate the carrots, finely chop the onion.
  3. Prepare the marinade: mix part of the vegetables with spices, pour dry red wine.
  4. We spread the pieces of duck in the marinade, leave in the refrigerator for 8-9 hours.
  5. After the specified time has elapsed, remove the duck, blot it with a paper towel.
  6. Fry the duck over high heat, salt and pepper.
  7. Fry the remaining vegetables with tomato paste, add dessert wine. Simmer for 15 minutes, then add the marinade and lay out the duck pieces.
  8. We simmer under the lid for a little over an hour, occasionally turning the meat over.
  9. Pour the sauce over the finished duck.

Duck in orange-pomegranate sauce

This exquisite dish will decorate any festive table.

  1. Cut the duck into pieces, rub them with salt and pepper.
  2. Fry on all sides in a mixture of vegetable and butter.
  3. Prepare the sauce: mix honey, orange juice, pomegranate syrup in a saucepan (for its preparation you need pomegranate and lemon juice, sugar - cook until syrup).
  4. Bring the sauce to a boil and cook for about 5 minutes.
  5. Grease the duck generously with sauce. We simmer for some time.
  6. Cut the orange and lemon into slices, grease with the remaining sauce, fry for 2-3 minutes. from each side.
  7. Decorate the finished dish with caramelized fruit slices.
