Pies are very tender, tastier. It was cooked by our grandmothers, and it is really so delicious that it just melts in your mouth. That is why, I think so, this dessert is still in vogue and it is baked not only at home, but it can often be found and ordered even in the most expensive restaurants in the world.

Apple pie on kefir - a classic, simple recipe for fluffy pastries

Let's make our culinary masterpiece! Initially, we will prepare the products, then we will quickly prepare lush, aromatic pastries, without much difficulty. The apple pie recipe is pretty simple.

Ingredients for baking apple pie

  • wheat flour (we take only the highest grade white) - 2 glasses of 250 gr .;
  • 200-230 ml of kefir (fat content from 2%);
  • 3 eggs;
  • a glass of sugar (you can have a little less or more, take it to your taste, not forgetting that apples will also give the finished product sweetness);
  • sweet apples - 5-6 pieces;
  • a teaspoon of ground cinnamon;
  • baking powder - a teaspoon (can be replaced with soda).

How to make yogurt apple pie that will melt in your mouth

1. Wash the apples well, peel them off with a knife or peeler, then cut them in half, remove the cores and cut them into thin slices.

2. Whisk a small egg, a spoonful of cold water, baking soda (baking powder) and sugar in a bowl. Beat the food until frothy.

Attention! In this case, you do not need to extinguish soda with vinegar; sour kefir will replace the vinegar during cooking.

3. Stir kefir into the composition with eggs, and then gradually introduce sifted flour, constantly stirring the products so that dense lumps do not form. It is not necessary to mix the composition very intensively and for a long time, otherwise it will lose the necessary portion of air and will not be so lush in the future. As a result, you should have a mass that is slightly thicker than the one that is kneaded for cooking with pancakes.

Flour for making dessert must be sifted, so it will absorb the air and subsequently the pie will turn out to be incredibly soft and fluffy.

5. Grease with butter or, as a substitute, you can take margarine, your baking dish, pour into it a third of the prepared dough mass.

On a note! Silicone molds can be used for baking. In this case, oil can be omitted for lubrication.

6. Place the fruit slices on top, sprinkle them with cinnamon and on top of the remaining dough, fill in strips or any arbitrary pattern, if desired.

If you are using sweet and sour apples for baking, I recommend mixing them with sugar before using them.

7. Preheat the oven (no more than 180 degrees), place the charlotte dish there and cook for about forty minutes.

You can check the readiness of the apple pie with a toothpick. If you stick a toothpick into the pastry and take out a toothpick, there will be no sticky dough on it - the apple pie on kefir is ready.

And now we will cook one more apple pie with sour cream. It also turns out very tasty, magnificent, incredibly soft and aromatic.

Products for cooking:

  • ripe apples, better with sourness - 700 grams (you can take more or less);
  • raisins - 150-200 gr.;
  • premium wheat flour - 1.5-2 cups;
  • 3 chicken eggs;
  • a glass (250 gr.) sugar;
  • a bag (15-20 grams) of vanilla sugar (you can take the most common vanillin);
  • sour cream (fat content from 20%) - 300 gr.
  • butter (best used with a fat percentage of 82.5 or higher) - 50-70 gr.;
  • baking powder - a teaspoon (one package).

To prepare a streusel:

  • 3 tablespoons of sifted flour;
  • 3 tablespoons of granulated sugar;
  • 30 grams of butter, the same fat as for the pie, butter.

Preparing the necessary products for the apple pie

We take out the oil from the refrigerator, let it soften at room temperature, but for now we will deal with apples. If you decide to quickly defrost butter in the microwave, remember that in this case the fatty dairy product loses its beneficial properties. I do not recommend doing this, it is best to keep the oil in the room for half an hour.

Mine, clean apples from seeds and cut them into small slices with a knife. Optionally, if you take apples with thick skin, it is better to peel it too. I use homemade apples with thin skin, and therefore I will not peel them this time.

To prepare this cake, I always take sweet and sour crumbly, but with dense pulp, varieties of fruit, they are best suited for this dish, fill the baked goods with minks of a special taste and aroma.

Attention! If you are using a sweet variety of apples, reduce the amount of sugar in the recipe, otherwise the dessert will turn out to be very sweet and not as tasty as you would like.

We wash the raisins, fill them with hot water and leave for 15 minutes. The product should swell a little and fill with moisture.

How to cook apple pie with sour cream, I tell you what your steps should be like

2. Take a mixer and beat eggs with sugar until a small foam (bubbles) is formed. By the way, you can use a regular whisk instead of a mixer. Well, I use a mixer.

3. Into the resulting egg mass, add the required amount of softened butter and continue to beat.

4. Add sour cream to the whipped composition. Remember, the fatter the sour cream, the fuller and more nutritious your dessert will be. It is best to use, of course, a rustic natural product, but you can also buy ordinary sour cream, but with the highest possible fat content.

We continue to beat the products using a mixer or a hand whisk.

By the way, I do not recommend using a blender in this case. This technique is quite powerful, much more powerful than, as a rule, mixers, and therefore you may not get what you need for our pie, the mass.

5. Pour vanillin into our composition on the tip of a knife or a packet of vanilla sugar for flavor.

6. Whisk the food.

It will be no less tasty, and for many, perhaps even tastier than in our case, add a pinch of cinnamon instead of vanilla or vanilla sugar to the dessert. Sour and sweet and sour apples go well with cinnamon, and the cake itself turns out to be incredibly aromatic.

7. In conclusion, add flour sifted through calico to the dough, even if in your opinion it does not require this procedure, as well as baking powder (I also recommend sifting it).

8. After adding flour and baking powder to the dough, first mix everything gently with a spoon, spatula or hand whisk, and only then beat. During the whipping process, you should not leave any flour lumps in the dough. The dough for apple pie on sour cream should be homogeneous, beautiful, tasty, even raw. As a result, your dough will be moderately thick, slightly thicker than for making a pancake. Like thick sour cream.

9. Let the dough stand warm for about 20 minutes, it should rest a little, so to speak, after beating. In the meantime, drain all the water from the raisins using a colander, and put the berries themselves on a paper towel so that they dry out.

Take a baking dish, grease it well with softened butter, gently smearing both the bottom and the sides of the container.

Pour half of your dough into the mold, maybe a little less, since most of it may be needed to cover the fry slices if you took a lot of fruit for baking.

Spread your apple pieces in an even layer over the dough, lay a layer of raisins, and then pour all this with the second part of the dough mass with sour cream. Raisins and apples should be completely covered with a top layer of dough.

Preheat the oven to 180 degrees, place your baking dish in it and bake for about 20 minutes. If you have it, it is best to set a timer, since after 20 minutes you will need to sprinkle the pie with a streusel. We will now start preparing it.

How to prepare Streusel?

You may ask - "What is a streusel?", And these are such sweet crumbs that are sprinkled on the product before baking.

To make the apple pie on sour cream look more fluffy and more delicious, we will spend literally a few minutes cooking sweet crumbs.

Pour into a separate small bowl three tablespoons of flour (also need to be sieved), sugar (put to your taste) and softened butter (about 30 gr.).

Use your hands to gently rub the food into the crumbs.

After the indicated time, pull the slightly browned pie out of the oven, sprinkle with streusel over the entire surface and again send to cook in the oven for another twenty minutes. Leave the temperature the same.

We take out the finished pie, made with sour cream from the oven, it should turn out beautiful, high, the crumb on top should not be too toasty, and the aroma from the dish will come out simply stunning. You just want to eat it quickly.

You just have to get your apple pie out of the baking dish, let it cool for about half an hour (even tastier when the apple pie is a little warm, but not hot), cut into pieces and you're done, you can serve it with tea or with juice, milk. Delicious, it just melts in your mouth!
