We associate the name of these sweets with childhood. And also with the famous children's camp. Both, of course, evoke pleasant memories when it comes to Artek waffles.

How did Artek waffles appear?

Waffles are confections that are made up of three or more wafer sheets with a filling in between. The history of their origin is still a mystery. Some people believe that this delicacy was invented in Ancient Greece. Then they were made from cheese and herbs and baked on a heated stone. According to another version, waffles appeared in Germany in the 13th century on the banks of the Rhine.

Who invented the Artek delicacy? Waffles with this name first appeared in the USSR in 1958. This happened thanks to the technologists of the Moscow Confectionery Factory, who developed several new recipes for everyone's favorite crispy delicacy. Among them were waffles "Artek", which got their name from the name of the world famous pioneer camp located in the Republic of Crimea. In the 60s of the last century, up to 25 different types of this product were produced at the Moscow Confectionery Factory. But the most popular (both then and now) are "Artek" wafers.

Wafers "Artek": product composition

The manufacturing recipe at different enterprises that make the delicacy is not the same. This means that confectionery products with the same name but different tastes will differ.

The most popular Artek in Russia is waffles produced by the Rot Front confectionery. Their composition includes sugar, wheat flour, special purpose vegetable fat, cocoa powder and milk powder, sunflower oil, baking soda and salt, vanillin flavor identical to natural, citric acid E330 and emulsifier lecithin E322.

Wafers "Artek": calorie content and nutritional value

Waffles are very high in calories. 100 grams of this delicacy contains 30 g of fat, 60 g of carbohydrates and only 4 g of protein.

For those who care about their figure, it is important to know how many calories are in Artek waffles. Nutritionists have calculated that the calorie content of this product is 530 kcal per 100 grams.

But in fact, "Artek" - waffles are not so harmful. Subject to the recipe, vitamins are even preserved in small amounts (mainly due to the cocoa powder contained in the filling). The chemical composition of such wafers includes vitamins (PP, E, B1, B2, A), macronutrients (phosphorus, potassium, sodium, magnesium, calcium) and trace elements (iron).

Some unscrupulous manufacturers use trans fats in the manufacture of confectionery products, which cause irreparable harm to the body. They affect the work of the heart and blood vessels, and their uncontrolled consumption of food leads to obesity, including in children. Therefore, you should always remember that high-quality Artek wafers cannot be too cheap, although this is not a very expensive product.

How Artek waffles are made according to GOST

In a confectionery factory, the preparation of waffles begins with kneading the dough. To do this, first sift flour into a special container, then add water and a dry mixture of baking powder with soda to it. Mix everything thoroughly. The dough should not be thicker than regular sour cream.

After that, white powder - lecithin is poured into the mixed mass, and then vegetable oil is poured. They will make the dough uniform in composition. No more ingredients are added. Contrary to popular belief, there is no sugar, and the filling makes them sweet.

After kneading, the dough goes through pipes to the next workshop, where the cakes are baked. The equipment required for this, in principle, resembles an ordinary waffle iron. Through special nozzles, the dough is poured onto hot plates, covered with the second half of the waffle iron on top and baked for 2 minutes at a temperature of 170 degrees.

Now the finished cakes are cooled down and go to the workshop, where a liquid filling is applied to them through special nozzles. After that, the wafer sheets are connected to each other. Then they are cooled in a special refrigerator to freeze the filling. And only after that the large sheets are cut with special strings into small wafers. Then they are packed and sent to the warehouse, and then to the store.

This is how traditional Artek waffles are made, the photo of which is presented above. Each consists of 5 crunchy layers with 4 layers of filling in between.

They are thin, golden and resemble snowflakes. Pizzelli can be rolled up and stuffed with, for example, ice cream or fruit, but most often they are eaten in their original cookie-like form. Pizzelles are baked in a special frying pan - they need a special flower pattern.

Waffles are considered the most versatile delicacy, which has long been served both for a festive table, as well as for a daily family tea party. Waffles are such a delicious dessert dish that there is hardly a single person who would refuse to taste their taste.

These "snacks" are still incredibly popular today, and it is explained by the variety of varieties and their very delicate taste.

Waffles began to be baked a very long time ago, back in the Middle Ages, and this sweetness was originally a kind of cookies. True, the technology for making waffles differed from the method of baking cookies in that in the first case, the pastry chefs left an imprint of a certain pattern or ornament, moreover, most often it was a cage. It is because of such imprints that the waffles got their name, which translated into Russian means "honeycomb".

Nowadays, waffles are also often found on store shelves; they are served as an excellent dessert in many catering places. At the same time, it can be noted that waffles are in such demand that they were even singled out from the huge assortment of baked goods, even into a separate group.

Outwardly, all waffles strongly resemble a honeycomb, however, different types of such baked goods can differ greatly in their taste, appearance and composition.

The main varieties of waffles

Wafers, regardless of their resemblance to a honeycomb, differ significantly in their taste and appearance. So, manufacturers constantly offer waffles of various assortments with a wide variety of fillings.

The most common type of waffle is confectionery stuffed with fat, which is supplemented with some aromatic additives, for example, fruit, cocoa, cinnamon or vanilla.

For the manufacture of some types of wafers, a dietary filling is also used, consisting of granulated sugar and some kind of fruit puree, for example, apple cider.

As for waffles with fondant filling, they are considered more high-calorie, and they contain a large amount of molasses, but in addition to it, they also include certain flavors, as well as various taste improvers.

Depending on the test

In addition, waffles are divided into several varieties depending on the composition of the dough:

  • simple, fat-free, granulated sugar, butter, milk;
  • semi-sugarless, not containing milk;
  • butter sugar made from the highest grade flour, and they must include fats, chicken yolks, granulated sugar and milk.

Depending on the cooking method

In addition, waffles are divided into several varieties, depending on the method of preparation, taste and appearance.

So, Belgian waffles most of all they resemble donuts, which are additionally sprinkled with powdered sugar, and in order for them to acquire the most delicate and unique taste, the necessary airiness, they are prepared from yeast and whipped proteins, taken in large quantities.

As for Viennese waffles, then they differ from their counterparts in large size and softness, and they often make delicious pies with a creamy layer.

English waffles are considered dietary, and they may include vegetables and potato flakes, and they are additionally fried until crispy golden crust just before serving.

Who doesn't love sweets? There are probably only a few unsweetened people all over the world. Among the huge selection of confectionery products, sweet waffles are very popular among children and adults. This product differs in that it does not tolerate high humidity. Wafers soften due to moisture, that is, they cease to be crispy. It is worth noting that waffles can dry out if they are placed next to radiators. However, high-quality and fresh waffles are quite capable of replacing a sweet dessert.

How to choose waffles

In the selection process, it is imperative to examine the waffle sweetness from the side. If the product is of high quality, then it must necessarily consist of separate wafer sheets. The filling fits between them. The thickness of each individual waffle is usually no more than two millimeters. The filling between them should be in an even layer. There should be no lumps in it.

The wafer sheets themselves are tasteless. They acquire their taste through the use of a variety of fillings. Actually, it is the filling that determines the energy value of the initial product. So, the fruit filling is not as "heavy" as the fat filling. Plus, it contains more vitamins and minerals.

Contains waffles and vegetable fats, which are used in the preparation of cream filling. The shelf life of the wafers depends on the quality of these fats. The higher the quality of the vegetable fats, the longer the ready-made waffles can be stored. It is noteworthy that the shelf life of waffles is easy to determine by taste and smell. If the waffles are old, they will give off rancid vegetable oil.

Damp wafers bite off hard, stratify, become very soft. If they are of high quality, they should smell fragrant and be slightly fragile. However, they should not crumble too much.

As for the packaging, it is better if it is transparent. Then it will be possible to visually assess the state of the product. The color of the wafer sheets should be golden.

As for the expiration date, everything is as follows. Plain wafer sheets can be stored for three months. Wafers with a cream filling can be stored for two months. As for wafers with fruit fillings, they can be stored for no longer than one month.

The advantages of Yashkino waffles are good taste, a large amount of chocolate glaze, pleasant crunch, delicate texture and pleasant aroma. Their taste and appearance are classic, characteristic of this product. Such waffles cost about 240 rubles per kilogram, but at the same time they are very light. The waffle cakes "Prichuda" are also in demand. They are packed in two wafers in one package, and the weight of the package is 70 grams. Moreover, each wafer is packed separately in a silver package. The inside of the waffles is very soft.

Glazed waffles "Caprice" are sprinkled with nuts and covered with a thick layer of chocolate on top. Such waffles are quite expensive - 200 rubles for a 480-gram package. The waffles are small in size, but they contain a lot of roasted peanuts. The same as puffed rice with cocoa.
