    - cinnamon in the dough - 0.5 tsp;
    - soda - 0.5 teaspoon;
    - fine salt - 2 pinches;
    - any vinegar - 1 tbsp. spoon;
    - refined vegetable oil - 3 tbsp. spoons;
    - fine sugar and cinnamon - for the filling.

    To prepare dessert pancakes, sift the flour through a fine sieve, add ground cinnamon and two pinches of salt. Mix.

    Add sugar to the flour mixture. You can add more, but then you have to add a little flour. It is not worth reducing the amount of sugar - firstly, we have dessert pancakes, and this already implies that they should be sweet. Secondly, sweet pancakes always turn out ruddy when frying, and without sugar or when there is little sugar, they turn pale.

    Beat eggs, pour in a third of a glass of milk. Mix.

    Pour this mixture into a bowl of flour, sugar and cinnamon. Stir quickly with a whisk (not with a spoon!).

    Stir until all the flour is moistened and the dough gathers into a viscous lump.

    Gradually adding milk, stir the mass with a whisk. At first it will be thick, heterogeneous (with lumps of dough), after a while the dough will mix with milk and become smooth. At this time, pour in the soda, previously quenched with vinegar. Beat until the baking soda spreads over the dough. Add vegetable oil and beat again, disperse oil stains until the butter is mixed with the pancake dough.

    In consistency, it will be slightly thicker than on regular pancakes, but due to the addition of soda, everything is bubble and airy.

    The pancakes are baked as usual - grease with oil before the first pancake is poured, then after the third or fourth pancake, or do not grease at all (do as you are used to). The peculiarity of frying pancakes in this recipe: one side is fried harder, until golden brown, the other just a little, taking into account that the pancakes will be fried again with the filling. The photo shows a toasted pancake, on the other hand it is light.

    For the filling, mix fine sugar and cinnamon (we take both to taste). Pour the filling on the ruddy side of the pancake, about a teaspoon (or more - at your discretion). Do not add sugar close to the edges.
